Kochi-based Anjali Kaimal is a final year BCA student of Chinmaya college. And, this alone cannot be her identity because she is already an entrepreneur. Anjali, who is in her early twenties is the chief cake artist and the founder of Fairy Bakes. Fairy Bakes is a home bakery in Kochi which specializes in making theme based cakes and cupcakes of your choice. For Anjali, her biggest support is her Mother, who most of the time helps her in her baking specialty.
Today, we will be knowing more about Anjali Kaimal and Fairy Bakes as the young home baker from Kochi joins us in this interview session to share her inspiring story. We hope this conversation with the young entrepreneur would also ignite your entrepreneurial dreams!
Hi Anjali, welcome to this interview session of conflatingVisions. To begin with, please introduce yourself to our readers.
Hello, I’m Anjali Kaimal, a final year BCA student studying at Chinmaya college. I have always loved to paint and bake. After joining BCA, I got very sure that I won’t end up doing a creative job and I will end up with an IT related job. My Mom, however, inspired me to start a home baking business of cakes and cupcakes. I decided to try it out and that’s when I actually fell in love with the art of cakes. I was able to bring in my own ideas, art and do all this alongside my usual routine. It’s been a year, and undoubtedly it’s so far been my best year.
Anjali, how do you split your time between studies and professional baking?
It’s not easy balancing classes and baking especially being a final year student. The major factor that keeps me going is my Mom who helps me a lot in balancing studies and baking. Without her support, it wouldn’t have been possible for me to split time between my academic classes and baking. She helps me out wherever she can regardless of what the time. Midnight or mid-noon, she is always there for my help.
How did you learn baking? At what age did you make your first cake?
I have never done any professional baking course or class. I am a self-taught baker and cake decorator. I don’t just focus on how the cake tastes, but I also turn the cake into a work of art. I learnt my baking mostly from youtube and books, which my Dad always gets me for reference.
I made my first cake at the age of 14.
Tell us about Fairy Bakes.
Fairy Bakes treats each cake as a piece of art. It is an art of cakes. Our main speciality is the theme cakes. I am usually given a theme by the customer, like Harry Potter or Spiderman or Valentine’s Day theme, etc. I execute the theme on my cakes. I help people convey messages through my cakes. Our main attraction for which I got the most number of orders is the Kitkat cake and Chocolate Excess cake. I also get numerous orders for different other theme cakes and cupcakes. Fairy Bakes is all about yummy good looking cakes made form the best ingredients. We also do homemade chocolates in different designs and with different fillings.
How is the demand for theme cakes in Kochi?
The demand for theme cakes and cupcakes in Kochi is huge. Every other day, I get an order for theme cakes. The high demand is because of the fact that theme cakes are different from the normal cakes that we get at the local stores. It’s exciting to see our design executed on a cake. Anything sweet and edible is exciting and when it comes in a theme of your choice, the occasion gets more special!
What are some of the signature products of Fairy Bakes?
Some of the signature products of Fairy Bakes are theme cakes, KitKat cake, chocolate excess cake and cupcakes. I also make homemade hazelnut chocolate balls and homemade chocolates with different fillings (nuts, caramel, jam, etc.) in them.
Anjali, what are some of the creative and challenging cake ideas that you have executed so far?
The most challenging was the architecture theme cake for an architecture firm where I had to make handmade scales, compass, drawing sheets as toppers. An order for 100 cupcakes and a cake with Mickey Mouse theme and my valentines day range named “you+me” were also challenging. I had a whole bunch of orders for Valentine’s day for which I had to stay up till 3 in the morning to complete. It was hard work, but it was worth it. I even got an order for a cake shaped like a banana.
Please share some baking tips.
Leaving aside the basic baking tips, the biggest one you need to remember is patience. Making a beautiful and perfect cake needs time and if you are in a hurry to finish things off, the results won’t be pleasing. More than baking itself, the decoration of a cake according to the customers’ wish takes more time.
Narrate some of your success stories.
All of my cakes were success. Considering the fact that it’s only a year since I started Fairy Bakes, I can say that people have accepted and loved my cakes a lot. I have huge appreciation from my customers. My biggest success is that my customers come back for more. All these wouldn’t have become possible without the immense support of my customers.
Celebrity Kanan Gill was gifted a box of my cupcakes by one of my customers and he put up a story that they were amazing.
I am still a beginner and there is so much more for me to learn and experience.
What are the challenges in baking? How do you deal with them?
The biggest challenge according to me is the decoration and customization of the cake or cupcakes. It has to be visually appealing and that is what takes most effort.
What are your future plans?
I am currently pursuing my BCA degree and going to do higher studies, but I am definitely not going to leave my baking business here at Kochi. I will continue to bake cakes and once I am done with studies, I will expand my business.
Anything else you want to share…
My biggest inspiration is my Mom. She is the reason I got the confidence to start Fairy Bakes. My Mom is a major part of this venture as she helps me out in every area that she can and makes work easier for me, especially during the days when I have college work. She is my biggest strength and nothing would have been possible without her support. My Father also has been really supportive and when you have a family this supportive it gives you a whole other level of confidence.
And one last question of this session Anjali, if you have had one wish…
My biggest dream is to start an art cafe someday. I love art, I love painting and I love baking. My biggest dream is an art cafe where people can have delicious cakes, cupcakes, chocolates and coffee surrounded by beautiful artworks. The place would be such where people can also use the cafe as a platform to display their artworks.
